Oreo Cheesecake Cookies



My husband and I are celebrating our 35th wedding anniversary this week.  We met in high school and we got married when I was 18.  He was a "much" older 21.  If one of my four daughters wanted to get married when they were 18 I would have done everything possible to stop it.  But my parents must have known what they were doing because it worked for me and I am so glad it did!  We have four beautiful daughters and one cuter than you can image grandson. All of our children live within 20 minutes of us so we get to see them all the time. We are very lucky in so many ways!

I made these cookies the other day because I knew anything with an Oreo in it would be good.  I saw these at Brown Eyed Baker.   

Ingredients:
1 cup unsalted butter, at room temperature
6 ounces cream cheese, at room temperature
2 cups sugar
2 tsp vanilla extract
2 cups all purpose flour
1 cup mini chocolate chips
2 cps Oreo cookie crumbs

Directions:
Preheat oven to 375 degrees.  Line a baking sheet with parchment paper and set aside.
In a mixing bowl, cream together the butter and cream cheese on medium speed until smooth.  Add the sugar and vanilla extract and mix until the ingredients are well combined.  Add the flour and mix until it is incorporated.  Stir in the mini chocolate chips with a rubber spatula.





Put the Oreos in a ziplock bag and crush with a rolling pin.


Place crushed oreo crumbs in a small bowl.  Scoop the cookies into 1-1/2" to 2" balls and then roll in cookie crumbs.  Place the cookie balls on the baking sheet.  Bake for 12-15 minutes or until the edges are golden and the tops are slightly puffed.


Cool on the pan for 2 minutes before transferring to a wire rack to cool completely.  Store in an air tight container.  Makes about 3 dozen cookies.
